As a summoner (and therefore an arcane caster), I have access to the spell Barkskin, whose components are V, S, DF. My question is do I require a divine symbol of some sort to cast it?

No. Divine foci are needed only for divine spellcasters.

The reason the spell is written that way, I'm guessing, is because it was a divine-only spell at the time.
