Question Regarding Uncanny Dodge Interactions

So, Uncanny Dodge is one of my favorite abilities, though it's pretty underrated. My question is, if you have uncanny dodge and a feat like deflect arrows, does that mean you could, say, deflect an arrow fired at you by someone you're clearly aware of, even if you haven't acted in the first round yet?

Second question, say you're doing a Rogue/Swashbuckler combo. Can you attempt to parry attacks even if you haven't acted yet, since you cannot be caught flat-footed?

While player opinions and "how I would rule it" is one thing, I'm looking for any official rulings on these matters. Links to errata, page numbers, or a link to a forum or FAQ where this is answered would be the most helpful responses.

1) I'd say yes. They CANNOT be caught flat footed and they are aware of the attack. Go nuts.

2) Not as familiar with swash...but from a cursory glance I'd say yes.

Under flat footed, it says you can make attacks of opportunity even if you have not acted if you have uncanny dodge. Parry is an AOO, so yes you can parry.

Agreed on both counts, just adding an explanation.

With the right rogue talents etc. you could get surprised, parry riposte and *sneak attack* back...
