How to make the difference between the player knowledge and the character knowledge

Advice

Hello everyone, I have a big question for you.

After playing some games and reading a lot, I obviously know a lot of thing about the game : how magic work, a tons of existing spell and magic item, strength and weakness of some monster , ...

But my new level 1 character shouldn't know all this things ! So how do you play (or roleplay) this ? When you know something important about the event in the game, but your character don't know it ? I know the knowledge check can help, but it's not enough roleplay-wise.

During my very first campaign the GM forbid the player to read the GM-book, especialy the list of magic item and spell of the other class. Same with the bestiary book. I think it was a really good idea, but it only work for the first campaign.

As a GM, I completely allow them to mix the knowledges. Sit in a car with someone for 15 minutes, and see how much you know about their life by the end of that 15 minutes. Groups of characters are spending far more time together than you can actually roleplay.

But... I also shake things up a bit. When they faced off against the Beholder in my campaign, those eye stalks worked quite a bit different than "legend" had it. I think it is far more up to the GM to handle this than players. My players know that the saves, bab, etc of a monster are never quite as they are listed in the manuals. :P

Assign levels of Meta-Knight instead of their chosen class.
