I would say it would be entirely down to your GM, I would treat it similarly to magical weapons in that they should be more available in larger towns and cities, putting a random chance of the materials being there and rolling on it.
If an encounter was expected in the near future which would benefit from the players having adamantine weaponry, I would tend to fudge the roll more favourably towards the players to reward good preparation.

Your answer is found on Page 24 of the Pathfinder Society Role-Playing Guild Guide. Because this is a question regarding Pathfinder Society Organized Play, it's not a question that is left to the GM to decide (some things are, but this one is not.)
All basic armor, gear, items, and weapons from Chapter 6 of the Core Rulebook, including Small and Large-sized items. This does not include equipment made from dragonhide, but it does include equipment made from the other special materials, such as alchemical silver and cold iron (see the Special Materials section on page 154 of the Core Rulebook). All mundane (completely nonmagical) weapons, armor, equipment, and alchemical gear found in any other source that is legal for play are considered always available.

While adamantine and +1 weapons are always available, keep in mind that +2 weapons are not, so by the time you want to upgrade your weapon to +2, you have to calculate the entire cost including adamantine to see whether you are allowed to buy it based on your Fame.
But still, adamantine weapons are great, so go ahead and buy one if you have the gold for it.

Because the fame levels are exactly the price of the pluses, the masterwork/cost of the weapon alone pushes it into the bottom of the next fame bracket. When I went through and did the math on this I couldn't get a special material to increase the fame over a strait plus.

Just thought; if a Chronicle opens up an X-longsword, could you, as adamantine is "always available", purchase an adamantine X-longsword?
I believe the answer is no. Items on chronicles are exactly what they say they are, with the one exception being that you can buy them as medium or small. Otherwise, you can't change anything about the item as presented.
