Will the season 7 updated guide to organized play be applicable to retraining our ACG errata'd characters? I'm asking specifically because the errata came out while the season 6 guide was (still is, as of this writing) official.
It's my understanding that the season 7 guide will have updated rules for retraining errata'd stuff and I realize the intention is that it will work for the recently-released errata, but I just want to explicitly make sure that it's allowed.

That is the intent.
Essentially, you must update your character to be legal before you play again. Any allowed rebuilds must be done before you play again.
So if you are playing before the season 7 guide comes out, and you want to do a rebuild, you will need to do so with the season six rules.
But if the play session happens after the season seven guide hits the street, and you do the rebuild after the guide hits the street, then use the season seven guide.
In other words, it doesn't matter which guide is in effect when the errata comes out, but rather which guide is in effect when you do your rebuild.

So I have a question which doesn't seem to be explicitly clear in the Guide. When dealing with forced changes from errata what exactly does a rebuild mean? I had assumed it meant rebuilding the class levels, stat points, feats etc within the same class but a recent post suggested you could basically change everything.
That seems a little too extreme for me to accept at face value. With an errata based change are we looking at something akin to the pre 2nd level rebuild or more limited than that?
This is the first time I have had a character affected by errata and if I am looking at a total rewrite then I might use the chance to give an Occult class a go.
