What would you assume for a gunslinger? Bullets and powder flask? or alchemical cartridges? And how many of the latter?
Probably a powder horn (10 uses) and the 10 bullets to go with it
These are "whoops, something's missing here" guidelines, and it's possible that in practice an NPC should have more ammo than that—especially if she's firing 3+ shots per round. Basically, give the NPC enough ammo that she can make effective use of her weapon(s) for a typical combat.

An NPC has a projectile weapon but no ammunition is likely an oversight from the development process. In this situation, I typically assume the NPC has a typical "bundle" of ammo, as it would appear in the Core Rulebook (e.g. 10 bolts, 10 sling bullet, or 20 arrows).
Would the same go for things like holy symbols and spell component pouches which are regularly missing from older scenarios?

I afford the NPCs in the scenarios the same courtesy that I extend to PCs. When a player says to me, "Oh, dangit! I forgot to purchase a spell component pouch!" or "I forgot to buy crossbow bolts!" I tell them, "Deduct the gold and write it down on your sheet. It's no big deal."
Likewise, if an NPC needs an item to perform the actions in his tactics (or to use his basic abilities), I give him that item. It was obviously an oversight by the author, the editor, or both.
If a GM doesn't want to give the players the courtesy of allowing them to ret-con dolt moments where they forgot to buy basic gear, then I think they should also not ret-con editorial oversights either. But that's not the way I like to play the game.

A quick search shows that out of 506 published Bard spells, 226 of them require a material component.

I need to redo my numbers, actually. I was using the d20pfsrd's advanced spell search for convenience, but after rechecking it not only included some spells twice (due to reprinting), it also included some spells that didn't actually have material components. I'm going to sort through the data with my own search, and will either edit in the numbers to this post or a new one, depending on how long it takes me.
Edit: Using the downloadable database from pathfindercommunity.net, last updated in May, there are 510 Bard Spells. 158 of them require material components, 352 do not. The following is the breakdown per level:
0: 4
1: 26 (yes, grease is in there)
2: 48
3: 34
4: 22
5: 12
6: 12
