SO I have finaly found peace with the inevietable fact that the only way to use plants lies within the Druid, as anything else is just way to featheavy and/or MAD to be done.
Now. . . Animate Plant, so this makes me a nice living plant monster of big size and stuff. . . how much damage does it do thou? It says deals the same damage as animated objects, those also don't have no damage stated. . . .
Also could I wood shape these plants into like a dragon or smth. to make fake Splinter Drakes? Cus that would be cool I guess . . .

It does damage with a slam sized appropriately for a creature of that size. Table here. As for actually making them, you want the bestiary here. Keep in mind this is not meant to be build-a-monster so much as "pick what abilities the plants you're animating would have". Probably most of them get tagged with flammable, for instance.
So yes, you could absolutely make something look like a splinter drake. It wouldn't actually be anything like a splinter drake unless you spent the CP on giving it whatever abilities of the splinter drake you wanted (and it would never have a breath weapon).

Large Animated Object, no construction points spent. Same link as last time, table on the right of the page. The bestiary has stats for each of the sizes of animated objects (and therefore plants).
As for changing the targets, the spell doesn't seem to provide a mechanism for changing targets. It's rounds/level, it doesn't last very long. On the other hand, it doesn't seem to require that only a single target be designated, so presumably you can tell it to attack "all those guys over there" and that would work.
