Can I show parts of the PDF?
Probably not. You're not allowed to include their art in a standard text review, for instance. As for if you were to show only pages that are text-only, you'd have to be careful to ensure you were only showing OGL content, not closed content. Worse, by doing so you'd need to include a copy of the OGL.
Basically, it's legally awkward.

Can I show parts of the PDF?
Within reason, you can quote parts of it. What you can't do obviously is put the entire PDF on view. Again, study the work of others to see how it works out.
But also, work on the quality aspects.. Use a decent SEPARATE microphone and camera, don't use the built in mike of your webcam.

I was thinking of recording my desktop. But if i cant show more or less any thing from the pdf then I cant do it like that :( And i have a Blue yeti condenser mic.
I going to rethink this.

You can certainly show the PRD; it's openly accessible to anyone. The issue is that you can't distribute copyrighted material. The images in Paizo's PDFs aren't open, so you can't distribute (show) them.
Really, a video review of a book doesn't work, I think.

The fair use exception to copyright law will probably protect you from copyright infringement provided that your review is limited and doesn't show content that goes to the 'heart of the work.' The leading Supreme Court case on this issue was Harper & Row Publishers v. The Nation.

If you dont plan on monetizing it, (IE no adds on the youtube page) you can probably use the community use policy. I am pretty sure that some community use products have indeed included paizo artwork and other copyrighted material. I certainly know for instance the podcast/youtube show Know Direction has often shown artwork from books they are reviewing. But they also dont monetize their show besides asking for donations to cover costs.
They also dont like flip through a whole book. I think if you wanted to show parts of a pdf, you would have to cut them up and edit them in. You couldnt just put a scroll through an entire pdf of a book on youtube.

So screen shots that I switch between should work on a none monetized video.
That would work.
I don't see much point in making screenshots. Unless your video is being shot in HD and viewed on a 21 inch monitor, they're going to be unreadable anyway.
My suggestion is that if you're going to review the work on video, and you want to become a video presence, the video should focus on YOU reviewing the work, not the work itself. Show the covers, show some pages from the book in your hand, if you feel it appropriate sparingly quote some text in an overlay. But most of all, concentrate on THE REVIEW.
Presentation IS the thing. If you don't catch people in the first couple of minutes and keep them engaged, they're going to click off.
