Can the Giant subtype be applied to a Fey creature?

In theory, yes, but typically Giant is a Humanoid subtype.

However, the Fey Creature template can be applied to a Cave Giant (since Cave Giants have 9 HD), which makes the Giant's Creature Type turn from Humanoid to Fey, while keeping the Subtype unchanged.

So while there may not be PRECEDENT for a Fey Giant, the rules can create a Fey Cave Giant without having to houserule anything or create an entirely new creature in order to do that.
