I've got three of these bad boys. Unfortunately, I've never built a mounted combatant before so I don't know what feats would help or what checks they would have to make (for riding, dismounting, anything). Is there a page somewhere that details this?

Halp plz, haha.

The first book of rise of the runelords has a few encounters with goblins riding..things. Goblin dogs included. Other than that your best bet are probably cavalier guides and srd pages on the skills ride and handle animal.
I tend to use d20pfsrd.com, but there's also an srd around here somewhere and other people also use "archives of nethys"

Two things about the tactics of mounts:

First, off: Mounted Combat. Maybe lances. Everything else is gravy. Especially at lower levels where you don't have most of the other feats. Charge with a lance, do double damage. Set up to do that.

Second, max out your Ride skill. It keeps your mount alive by deflecting attacks, and may keep you alive by, for instance, quickly taking cover behind your mount. Getting a really high Ride check is worth it. Traits, masterwork equipment, and even Skill Focus, are all worthwhile.

Well, three things. Read the section on mounted combat in the CRD carefully! Also the Ride skill.

Take the Roughrider Fighter archetype... it will allow you to put your dexterity to good use, plus it allows you to ignore checks!
