Gamemastery Guide has a bunch of pre-made, in addition to the NPC Codex mentioned above. They're not random, but really, you don't need them to be random, because your players aren't going to see the stat sheets. Your players won't necessarily know what class they actually are, unless you are in the habit of treating class-names as common knowledge in-world. Personally, I don't, except for a select few, like Paladin or Alchemist, which would be pretty obvious, sans archetypes.
I made a list of races to randomly roll on when I want to make npc's, heavily weighted toward the core races, and appropriate races for the region. After that, you just have to decide what sort of function the npc is supposed to perform (melee, ranged, magical or skilled) or roll an appropriate die to determine that as well. Once you know their race, you can roll appropriate heights, weights, ages and hair/eye/skin colors.
