I am wondering if there are any other things you can spend your prestige points on other then what is listed in the 'Guide To Pathfinder Society Organized Play' manual?
Also on Table 5-3 it shows how Fame and Item Purchases, does this mean you can spend your PP on an item of that level? (basic items???)
I am confused, any help would be great, thank you!

There are additional things you can buy with prestige in the Pathfinder Society Field guide. I'm not sure if there's anything in any other books.
As for your other question, Fame and Prestige are related but separate concepts. When you get Prestige your Fame increases. When you spend Prestige, it does not affect your Fame. The table you're looking at tells you that if you have certain amounts of Fame any legal item with the matching gold cost (or less) is available for you to purchase. You still need to spend the gold.

The Prestige/Fame-thing is like favors/publicity. If you are doing well (= you get lots of Prestige) you get more famous and the society recognizes your skills (= your fame increases). By spending prestige you are pulling some strings (with your faction or the society) and they help you in some ways (they give you equipment, they help you get rid of a disease, they go grab your body...). Obviously at some point you're out of "Help me because I helped you"-cards (= your prestige is running out), but your fame is unaffected by it. Because people do not forget you just because you have no favors left.

I made a site with the vanities available in the Society Field Guide and the Society Primer; linky to the site.
There are a few ways to use your prestige to buy items. The two known ones are:
1 Prestige Point for an item of up to 150 gold pieces worth.
2 Prestige Points for an item of up to 750 gold pieces worth.
You can only do this once per scenario, and only one of the two, and as previous posters pointed out, those don't require you to have the fame needed for buying items not always available.
There are boons on chronicles which allow you to spend prestige for items with a higher worth.
