Tactically? It can be hard to say besides the fact that you have enough flying mounts to go around.
Socially? I think riding into a meeting at the king's castle riding a type of dragon would say a lot about you. It will make that 'totally not evil' chancellor completely jealous. Offer the king a fly around, and that could be brownie points. Well, assuming the castle archers don't freak out and fill you with arrows before you ever get there.

it's the metaphorical story volcano... :P

How about in general? This seems like something that can be pretty sweet.
...honestly, in a horse centered society, I think you would have trouble getting a large flying predator into town without causing some ruckus that the town guard would have stern words about. You can't just park these things an expect everything to be alright. Especially since wyverns are hardly known for 'subtlety' and 'not giving those horse good reason to be afraid when they get a bit hungry'.
But still, they do have some use for a dynamic entry into a manor that, while hardly subtle, would give you a chance to storm in fairly quickly. And in a chase sequence, it would be hard to beat flight and a speed of 60 on any normal steed.

Heh, you bring up a good point about the "horse-centered" bit. It would create... complications to go travelling around with a personal troop of...
Troupe...
Circus troupe...
Oh, the dots, they are-a connecting.
