I just have a general question about enchantments that have a just flat +$$$$ cost value, do they count against the total +10 enchantment bonuses since there are not technically a +1,2,3,4, or 5 bonus.

No, they do not count against the +10 maximum.

I believe that say a flaming +1 sword counts as a +2 item for cost & max enhancement of +10.

True, Bandw2, but that wasn't the question. The OP is asking about things like Fire Resistance enchantment on armor, or other things that do not have an equivalent bonus.

Adaptive, which is a ranged weapon enhancement that costs 1,000 gp, for a weapon example.
