Paizo has aimed at discouraging the taking of prestige classes, so I doubt most people have seen more than a few in play.
Also, you can be a Lion Blade or a Hellknight without the prestige class through prestige points. So even if you've seen a hellknight or whatnot, they might not have the prestige class.
For example, I saw a Hellknight in play. Whether they had the class, I have no idea.

There is no distinct mapping from factions to prestige classes. There are a few that show up, such as Eagle Knights and Hellknights, but those are not all-inclusive, nor were they designed with PFS factions in mind.
Knights of Ozem are, in fact, awesome, but those are the anti-undead forces that put down the Whispering Tyrant. They don't have particular efficacy against the demons of the WorldWound. Mendevian Crusaders and Low Templars are classes really for fighting in the WorldWound, but that's not all that the Silver Crusade faces in PFS.
Search around and you will be able to find a good fit for your character, or you can use most any class for the Silver Crusade. I have a paladin and a life oracle of my own, but people have fun with fighters and even rogues in that faction.

Prestige classes are for the most part not specific to factions, but some factions have natural fits with certain classes.
Living Monolith is an Osirion-related prestige class. The new version (from People of the Sands) is good for casters or melee.
Sczarni can look at any of the "sneaky/tricky" classes like Master Spy or Arcane Trickster.
The Daivrat prestige class comes from the Qadira book. It deals with being a caster friend to genies. I haven't seen one in PFS (at least partly because of the GM variation inherent when calling outsiders).
Silver Crusade has several good natural fits, especially for divine classes. Champion of Irori is a good fit (for a very specific build). Divine Scion is a caster choice and Knight of Ozem meshes with melee.
Grand Lodge can be anything but the classes with the word "Pathfinder" in their name bear special mention. Pathfinder Field Agent, Pathfinder Chronicler, Pathfinder Delver, and Pathfinder Savant are natural fits.

well i have more of a "shield" halfling paladin and a "sword" human paladin. The shield is a protector and the sword is a holy smiter of evil.
And aren't low templars more mercenary types that fight demons in the worldwound?
I will go with straight paladin for the halfling and maybe holy vindicator for the human i think. I think there should be prestige classes that require fame to get into. Like hellknight should require so much fame with cheliax in order to become one. Same with Steel falcon, or golden legionnaire.
