So I started making a cleric of Count Ranalc with the Darkness and Exploration domains... and somehow has turned into a speedster. He's got a move of 40' and the Run feat. I figure that out of the gate, he can cast Expeditious Retreat and have a bonus to long jumps of +29...
But what do I do with that?

You can bravely run away. You can chase down fleeing foes and net them or something. You can harass enemies to death with a bow if they don't have any ranged attack.

So, you are Dex based, and yet have no weapon finesse or point blank shot/precise shot. Your Cha is dumped so no channels, and your Wis a little low for save or suck spell dc.
You'll be okay for most cleric casting, but you will not be very effective in combat. I'd really recommend weapon finesse instead of dodge.

Spring attack, mobility, take moms and get snake style and panther style, grab dodge and mobility and enjoy a cool schtick.
Can use the speed as a form of defense when there is enough space. And you have enough speed. Move over to enemies. Perform attack. Keep moving out of enemy range. End turn. Laugh as enemy wonders how to resolve such a situation.
I have a monk who was built on that idea (although I have abandoned it for ideas that came up as a result if trying to refine it).
