My GM is going to be running the Reign Of Winter adventure path and brought up the fact that it appears to be based heavily around fairy tales. As such, he thought it would be interesting to have us run through it as fairy tale inspired characters, or thematically appropriate ones (Winter Witch, Oracle of Winter, and so on).
The only idea that popped into my head was the idea of a Huntsman style character, from stories like Red Riding Hood. Pretty much a Human Ranger with a Greataxe.
Does anyone else have any other good ideas?

There are lots of princes whether in disguise or not. Soldiers get a lot of play. Lots of princesses. Lots of witches, which could be built as sorcerers, wizards, witches, or druids.

...if this started at a higher level, I would say that you should play a druid and wildshape into an appropriate form (lions get a lot of play, and are fairly decent; it is also an actual fairy tale) all day. Say that you are cursed to be a lion whenever the sun hits your skin. Obviously you would take the appropriate feats to be a talking animal. Unfortunately, this does not help you much, since these things always start at level 1, and you would need to be level 8 to pull this off effectively.
Anyway, for a less...dry...way to look for fairytales that do not get as much coverage, you could look at the webcomic called Erstwile Tales. It is rather true to the original versions found in Grim's Tales, and it often goes for the ones that are not as quite family friendly (the one with the chickens especially seems like black humor).
Anyway, you can give that a try and see if you find anyone that looks like they have an identifiable class.

My favorite fairy tale inspired character I've seen so far was Little Red Riding Hood done as a Halfling Cavalier.
Some neat little nods to the original story:
She took exotic weapon proficiency Dwarven Waraxe so she could wield an oversized woodsman's axe in two hands.
Her hood was a cloak of protection.
She had a Handy Haversack basket full of delicious pastries (and explosives).
Taking a famous fairy tale character and giving it a pathfinder spin wouldn't be hard. Just pick you favorite one, I'm sure we could help you make your concept work.

For a moment I thought this thread was about the Fairy Tale manga. :)
I thought that too, until I read it as the classic "Fairy Tale" instead of "Fairy Tail".
But if we're sticking to classic fairy tales, often the protagonists are regular folk who turn out to be unusually clever when confronted with fantastic characters/situations.
So my first thought would be rogue, bards and the various archetypes with above average scores in INT,WIS and/or CHA.
