I had the misfortune in my last game to go head to head with a high level demon. Can anyone suggest a few good spells for demon fighting?

Let's see... Here are a few things that I've come to appreciate as I've had to deal with more and more demons in PFS scenarios. First off, anything that's labeled as "Spell Resistance: No." Most of the Conjuration and/or Summoning school falls into this category. Investing in an elemental metamagic rod is a good idea too to make sure you're able to switch out your high damage elemental spells for something that the demon in question isn't immune to.

If you can fit it into your build via retraining or gaining the level for it, the Spell Penetration feat will be very useful for overcoming that damned SR. If you aren't able, you can use the spell Sure Casting and the item Dweomer's Essence for that added punch. Also, though they tend to have less oomph than your standard electricity or fire spell you generally can't go wrong with anything that discharges Force or Sonic energy (though SR is still a concern).

Finally, make sure your Knowledge: Planes is cranked up so you can be certain of what type of demon you're facing and what their specific resistances and immunities are. I would even go so far as to write them all down as your official "in character demon log" so your GM can't force you to roll your knowledge every time you run into a Dretch.

Ok, I like the items you listed. I all ready have Spell Penetration.

Is it legal to keep a log of the results of a Knowledge check between PFS games?

There's no reason I can find where you shouldn't be able to. It would be the equivalent to keeping notes on your adventures. Heck, if it's assumed your character is familiar with a certain Venture Captain after interacting with them once, I can't see why your character shouldn't be able to keep track of the various monster's they've encountered. Personally, I would limit their log to the information they or their party members uncovered as opposed to just copying the monster's Bestiary entry though.

If you're really worried about it, just note which scenario your PC encountered the monster in their travels.
