Applying arbitrary subtypes vs a template are two different things. That being said a creature with the evil subtype does not have to be evil by any means but that would be a rarity.
As far as the fiendish subtype goes, (and celestial) it does not change the base creatures alignment. The template just represents the changes that the creature has undergone in order to survive in the harsh landscapes of the outer planes.

So yes, things with the Evil subtype can be smited regardless of their actual alignment.
However, the Fiendish Template grants no such subtype. A LG Fiendish Whatever, while an oddity, would not be affected by Smite.
