For weapons that have multiple inherent abilities (trip and disarm for example), how often can you switch between the options? For example, could you switch on three turns between the two (trip turn one, then disarm, then trip again) or does it work differently?


You don't so much switch as choose how you use it for each attack. If you want to trip, you gain the benefits of the tip quality. If you use it to disarm, then you get those benefits. Unlike magic, these are simultaneous aspects, that are all active at the same time. But you only get the benefits when used in the appropriate manner.

The inherent abilities are passive, you can use it for either whenever you want. Heck, Trip weapons don't even do anything aside from keep you from being countertripped on a failed trip attempt.
