Ok, so I am going to be playing a Pathfinder game starting at level 6. I wanted to make a mounted character (likely a human) as the GM as assured me at least half of the encounters would allow me my mount.
we also discussed the issue of mounts and he as agreed to let me take a Pegasus as a mount for either a paladin, dragoon, or beast rider.
I would like some advice on which of the above would give you "most bang for buck" and would be a fun concept to RP. I am hovering over paladin or dragoon atm though the beast rider still nags at me lol.

With those stats... paladin is probably the best bet.
I would say, however, that mounted combat involves a heavy feat investment, and it might behoove you to play a small character. Then your mount is medium, and you should be able to use mounted combat is pretty much every fight, not just half.
Either way, mounted characters pretty much write themselves. Mounted Combat, Spirited Charge, Power Attack, Furious Focus if you can afford it, Trick Riding when you get to the right level... Lance and Shield are the clear choice for weapons. Then use any sort of two-hander as a backup weapon when you're stuck on foot.
Make sure your mount grabs imp. overrun and charge through if it can, and just make big charge attacks.

also, I am the only real "tanky" character in the group (the other being a monk) so would shield focus/dodge be a good pick up?
is going dragoon/roughrider worth the loss in mount companion /level for the bonus feats and damage?

I can always suggest cavalier, or samurai as well, just because cavalier is based around mounted combat, and samurais get mounts for free.
I have played as a dragonborn kobold cavalier during a campaign a few years ago (gm allowed some from 3.5), and had a blast being the small knight, shiny of scale and armor, riding around a dragon themed beastie with a burrow speed. GM even allowed for me to have an exotic saddle, and helm set up to allow for short, subterranean dives.
So, there's an option for you if ye want it as well.

Also, any "fun" build suggestions would be ok. I like flavored characters, not just wood on horse that charges. That aside. I would still like to be some efficient at my tasks :3
I HAVE considered a halfing knight. what it loses in "coolness" it gains in humor. I looked at the samurai but I feel its not for me this time around.
