This is an NPC, and yes we can all agree that this build is suboptimal.
So I'm trying to build a Cleric 5 / Monk 4 that isn't completely horrible. Emphasize buffs and try to make him respectable in combat? Or make him a tactical spellcaster who can move around a lot? Assume a 15 point build. This guy is evil, may have some mooks around him -- ghouls, ghasts, wights, like that. Available domains are Chaos, Evil, Madness, Strength, and Trickery, with subdomains Deception, Demon, Ferocity, Insanity, Nightmare, and Thievery. Archetypes are certainly an option.
Suggestions? Thoughts?

My first Suggestion is to only take two levels of Monk that's all you need as a cleric.

Round 3 Stunning Fist DC 21 Fort + Inflict Moderate Wounds DC 19 Will

My first Suggestion is to only take two levels of Monk that's all you need as a cleric.
Say more, tell how. 4th level gives you +1 AC, more damage with attacks, and all those nice ki points.
Part two is how much do you want to kill off your party?
This guy is meant as an opponent for a 9th-10th level party. He'll probably be something like a Cleric 4 / Monk 4 / Demoniac 3, which since cleric/monk doesn't synergize and Demoniac is one of the crappier PrCs will make him something like CR 9 on a good day. However, he'll be on his home turf and will have lots of undead around. So, looking for an interesting/flavorful encounter more than anything else.

You will need to make him at min level 12 or CR 10 to have a low level encounter for that group. If you want him to challenge the group you will need to make him at least level 15 or CR 13.
At level 7 I have a buffed AC of 31. With the higher levels I will be looking at a mid 30s to low 40s AC. This is with a 20 point buy so I will lose one point of AC and Save DC with 15 point buy.

I'm playing this character right now. Ki points are better than itching, but not better than clerical spellcasting.
Don't have ki strike (magic)? Cast magic weapon.
Don't have d8 punches? Cast bull's strength.
Remember, when you go with Sensei, you can then take The TWF tree to bring your number of attacks up.
This character can be an absolute beast with prep time. Just look at what you can do with greater magic weapon, magic vestment, owls wisdom, bull strength, prayer, bless, heroism, freedom of movement, and death ward, which all stack I think.

Cleric/Monk it's not about the damage. It is fully abut the touch spells, and stunning fist. You first cast a touch spell like curse. Next round you stunning fist attack your target. That also discharges the spell you cast. So you first make them roll a save vs stunning fist, then you make them roll a sv curse. You curse them with 50/50% that means every round they need to roll D100 And if they get below 50 they can take no actions. That last until they are dead or they get remove curse cast on them. You could do the same with any touch spell. Curse just happens to be a really effective spell to do it with. You can do it with the hole inflict line but the damage low. You can do it with higher level touch spells as well. Lets say your level 11 9 cleric you can stunning fist + Poison . How ever that is using a level 4 spell.

One option is to use Guided Hand and Crusaders Flurry - a very feat intensive build but workable. Then you work on pumping your wisdom as much as possible, as you are essentially SAD - wisdom bumps your AC, to hit; you use cleric powers to add to damage.
I worked up a 5th level thought experiment for PFS. It's feat heavy but playable. He would want to pick up Combat Reflexes and add Conductive to his weapon (to channel bleeding as well as smites), eventually.
I'm sure you could adapt the concept to your character.
