That is the basic gist of a PbP, yes...Games take longer (obviously) but you tend to get a lot more role play aspect as you can finally show off your character's personality and thought process.
I would be interested but would like some more information about the game itself. Is it a PFS authorized game or just for fun? Level of players, and just some setting information.
I have 1 PFS character, a level 2 Inquisitor.

I've considered getting into PvP since it would give me more of a chance to think about what I want to say before I say it. I've seen a few things online like Living Pathfinder http://www.enworld.org/forum/forumdisplay.php?388-Living-Pathfinder
But I haven't seen a PFS-specific game. Let me know if you dig anything up.

Zoalord - they are sanctioned Society scenarios. Players get a chronicle sheet and everything.
Gord - you just have to keep prowling the Recruitment message board. Keith's playing in a scenario I'm in right now. It helps if you complete character information entered in for your society character. It makes things easier for GMs.
