Meaning, would you go say Ogre +4 fighter levels or 8 fighter level human? 8 levels of cleric or 6 monster+2 lv of class?
I realize it is situational depending on party need but overall, do monster HD compare to class levels 1 to 1?

No, they don't compare at 1:1.
According to the rules, a Pixie (4HD) is considered to be a level 8 cohort, an Ettin (10HD) is considered to be a level 16 cohort and a Stone Giant (12 HD) is a level 18 cohort. All with no class levels. I am not sure how Paizo determined these equivalent cohort levels and I could not find Ogre on the list so I am not sure what cohort level it would be considered, but my guess is that it would at least count as an 8th level cohort, much like the Pixie does.
