If I'm reading the discriptions correctly vicious stomp and stunning fist cant be combined in one attack because stunning fist is a declared attack. Stunning Fist cant be used as an AoO.

I read it a little differently.

You have to declare that you are expending a use of Stunning Fist before you make the attack roll.

I see no restriction to using stunning fist with an attack of opportunity. If you threaten someone with an unarmed strike, and they draw the attack of opportunity, you should be able to declare the use of Stunning Fist before making the attack roll for your attack of opportunity.

This. You are just required to let it be known you're using it - So that they may have the opportunity to use an ability to block it Lulz : P Same goes for punishing Kick or any others weirdly worded like that for the Monk. You can use it as a part of flurry, or even as an AoO.
