Happy Birthday, Joela! Depends on what you're looking for! Any file on my top 10-lists/candidate-lists I'd stand behind.
Beyond the pieces of advice by ericthecleric and TOZ and my top ten-lists, these are what came first to mind:
Crunch:
Drop Dead Studios - Rogue Glory
Rite Publishing - 101 New Skill Uses, 101 Hazards & Disasters, 101 Special Materials and Power Components
Radiance House - Pact Magic Unbound Vol.1
Super Genius Games - More Fighter and Rogue Talents (see what I did there, TOZ ;))
Fluff:
Raging Swan's Dressing-and So what's...-series.
Classes:
Purple Duck Games - Covenant Magic
Interjection Games - Tinker
Dreadfox Studios - Swordmaster, Puppetmaster
LPJr Design - Machinesmith
Modules:
Frog God Games - Razor Coast (+all supplements), Scorned
Kobold Press - Anything, really.
Advantureaweek.com - Snow White I + II
Older, but under-appreciated: Gaming Paper - Citadel of Pain
EDIT:
Direct Support for Paizo-APs:
Legendary Games - Their Gothic Grimoires are gloriously gloomy!

Do you want player stuff or GM stuff?
If GM stuff I would go with Raging Swan stuff. Here is a link to Some Cool GM Stuff from them. I am a fan of the "dressing" stuff. It is cheap and good quality and really can enhance your game.

It's my birthday today and I decided one way to celebrate is spend some cash on Pathfinder-compatible products. There's a lot of those, though, and I'm only allocating a hundred bucks.
So, what do you recommend? I'm primarily lookin' at pdfs.
Thanks in advance!
Since it is your birthday Joela why don't you do this, send me your email address and I will send you a PDF copy of NeoExodus: A House Divided campaign setting as a birthday gift. I mean it IS your birthday and you should be getting a gift, instead of spending your money on a gift.
And if you feel the need to thank me, then tell everyone you know who plays Pathfinder to support the 3PPs of Pathfinder. That is thanks enough. Happy birthday.

Oh, wow. Thanks, Louis! That was unexpected *sniff*

One of my favorite products is SGG's Genius Guide to Rune Staves and Wyrd Wands. It makes wands and staves much more interesting for spellcasters, as they now have special abilities that you can add to them, kind of like adding flaming to a sword.

If you don't already have it, I unreservedly recommend Cerulean Seas from Alluria Publishing.
It's the complete underwater expansion for Pathfinder with beautiful art, entertaining writing, well thought out rule enhancements, and campaign ideas.
If I was forced to pick one book as a showcase for Pathfinder 3PP titles this would be it. If you buy it and don't like it, I will paypal you the cost of the book.

Pretty much anything by Super Genius Games is a safe bet. The number of people I've seen who've pretty much just decided all SGG products are allowed because of how well written and balanced they are is quite impressive. It's also a list I'm on, when I GM. I actually use more SSG classes than I do Paizo as a player.
The Legendary Series by Purple Duck Games is quite fun, too, for impressive artifacts that scale with the characters.
Rite Publishing's Ironborn of Questhaven are a fun race for a more steampunky campaign, as is LPJ's entire line of products.
Cerulean Seas is good, and you're getting the Neo-Exodus one (nice one) so I'll als throw out the Midgard Campaign Setting if you feel like a vit of norse in your tales of adventure.
