So let's say my DM doesn't allow Monk's Robe to scale past level 20.
If that's the case, I'll likely want to sub 5 levels into another class. What would combine well with Monk? I'm Dex/Wis, Weapon Finesse, low Cha. What class would be a somewhat synergetic mix, cool mix, and/or highest damage mix?
My monk is a disarming, tripping/vicious stomp, ki leeching, snake style suite, truestriking, stunning/paralyzing/etc, unarmed flurry build.

I'll second ninja since it does mesh fairly well. Additionally, you can take a look at Brother of the Seal, but you won't get some of the best features and it won't exactly address the issue of the monk's robes becoming obsolete.
You don't exactly need to decide now since you'll have time to see what the party could really use. The only catch is if you want to consider a PrC in which case you have to make sure you qualify for the PrC.

Fighter - would boost attack bonus (especially for those AoOs), give you access to dueling gloves, etc. and overall be a solid performer.
Rogue or Ninja - tons of skills, synergises very well with dex, and you get sneak attack into the bargain. Ninja adds you some nifty ki abilities which work well with your monk.
Cleric (or druid) - would pack you some spell-casting power (concentrate on the buffs, though you may have equipment that will boost you better by this point). If your wis is better than your dex, Channel Smite followed by Guided Hand could be very good for you.
Paladin - if you can get a positive charisma modifier paladin works VERY well for the monk. Smite bypasses all DR, you get fantastic saves, real self-healing.
Wizard - if you have positive intelligence, a few levels of wiz are great for the self-buffs: shield for +4 AC is a good start.
Duelist - quite a good blend: any intelligence bonus added to AC, and your Snake style allows your unarmed strike to gain the precise strike advantage. On top of that you have full BAB, and probably most of the qualifying feats in any event.

Also, You could change alignment to a non-lawful and go with a Brutal Pugilist Barbarian. You would get some more BAB, Rage powers, and finally treated as one size larger for grappling. It could make sense froma roleplaying point of view if something happened that filled your character with rage so they couldn't advance any further as a monk.
