I usually re-do the math on any creatures I include in my encounters and I spot tiny little errors now and then...
Is there a place where such things can be posted for inclusion in a future errata doc or how does that work?
For instance, the Skeletal Champion is listed as having a Touch AC of 12 and a +1 Dex bonus... that can't be right (medium creature, no special items)

Probably so :-), but this here thread is for Beastiary 1 Errata.
In the rest of that forum you can find other threads for Errata for other Rules products. (Core/APG/Bestiaries/etc)
You might want to search the thread first before posting, if it's already been posted there,
they don't actually issue updates (even on PRD) until a new printing has come out, but will do so when that happens.

Thankfully, the first Bestiary has a fast track record of being errata-ed, since it's one of the two core books necessary to play.
Still waiting on that Bestiary 3 and Ultimate Combat errata, Paizo. :P
that only means you hav t gotten enough people to buy it to seel outo f the first printing... remember, they only do errata when they print the next printing of the book... its all in the consumer's hands
