Obviously you can sneak attack with Acid Arrow as it requires an attack roll and deals damage, what I'm curious about ...
is there anything in the RaW that says the sneak attack damage doesn't occur on the next round when Acid Arrow deals damage again? I'm guessing that since you're not making a touch attack a 2nd time you're not going to get the sneak, but just curious to see what others think.

No, you do not. Similarly, you get sneak attack damage when throwing an alchemist fire at a creature denied its Dex, but not again the next round when it is on fire.
Edit: nor do you get sneak attack damage each round for bleeding wounds.
Edit++: the rogue sneak attack ability reads, in part, "The rogue's attack deals extra damage..."

The Fox is correct; sneak attack would happen on the initial hit but not on subsequent damage.
An off-topic heads up: you actually can't sneak attack with Alchemist's Fire due to the Throw Splash Weapon rules:
Splash weapons cannot deal precision-based damage (such as the damage from the rogue's sneak attack class feature).

Correct. Sneak attack requires an attack. The ongoing damage is not an attack. Therefore, no Sneak damage on the ongoing damage.

Good catch. Sorry about that. I was just trying to come up with examples that deal ongoing damage, and that was off the top of my head.

I'm also pretty sure, but not completely positive, as I couldn't find it in the FAQ... My FAQ fu failed me (/Shame) that there's been a clarification saying that sneak attack only applied once per spell, so that you couldn't get three sneak attacks with a scorching ray at lvl 11 for an example.

It's not in the FAQ it's in the errata, but you are correct. The example they gave was scorching ray. Even if you have two rays, you only get sneak attack on one of them. I think that's pretty crappy considering if you have two melee weapons or more than one attack with one melee weapon you get sneak attack for all of it, but there it is.
I also think the FAQ system is pretty crappy. Trying to find anything is impossible. I usually just do a google web search and find it that way.

It isn't that the FAQ system isn't a a good, it's just a weird one, and that weirdness is that most FAQs categories are made by which book is the ability that forced the FAQ, and the way to search isn't the best one. First you go to that page (accesible from the top right of your page, just right of the shopping cart), then you have to go through every book in the list (in the table at the right part of the page) and look for what you want to find.
Alternatively you can go to that page and do a search to the posts there, keep in mind that this page has only FAQs from 2013 and afterwards.
