Are there any archetypes or variants out there that replace the Mount features? Homebrew or third-party might work as well.
I'm not interested in the Muskeeter, Standard Bearer, or Samurai, or anything that replaces the mount with another animal. Picky, I know.

I too am interested in this.
I know you said no Samurai, but the Sword Saint Archetype (found in the Pathfinder Player Companion: Dragon Empires Primer) gets rid of the mount all togeather. Then just re-flavor the character to be a "Westerner" (possibly ask your GM to replace the Samurai's Eastern weapon profs and the "Weapon Expertise" class feature for more flavor appropriate weapons or just use a katana and say it looks like a bastard sword).

Wasn't there a mountless archetype in the creatures book? Houndmaster or somesuch? If I remember right he trades his mount for a dog or hawk animal companion.
But perhaps I'm mixing it up with another class' archetype.
If 3rd party products are ok you can use the Super Genius Games Archetype Products. These allow you to trade standard packages from any class for one of the archetypes in the product. For the Cavalier, one of the things you can trade is the mount and mount related abilities like cavalier's charge and expert trainer.
You can then add any of the archetypes from these products.
The martial archetypes work particularly well for a cavalier, but depending on your concept, lots can be useful.
