If I am mounted, are my mount and I considered to be adjacent to one another for the purposes of feats and abilities? Why or why not?

By RAW you share the same space, so you are technically not adjacent.

For most things that come to mind it is reasonable though to allow actions that require you to be adjacent (like aiding for example) because otherwise I think it becomes somewhat ridiculous.

Melee Attacks: With a normal melee weapon, you can strike any opponent within 5 feet. (Opponents within 5 feet are considered adjacent to you.) Some melee weapons have reach, as indicated in their descriptions. With a typical reach weapon, you can strike opponents 10 feet away, but you can't strike adjacent foes (those within 5 feet).

RAW seems to be you are considered adjacent as long as you are within 5 feet. Sharing a space is definitely within 5 feat :P

Most mounts are large enough to occupy more than one square so you are most likely adjacent to some part of your mount.
(I Know that you seem to count as occupying all squares your mount does)
