Ok...

Brew Potion states that:
Potions are like spells cast upon the imbiber. The character taking the potion doesn't get to make any decisions about the effect—the caster who brewed the potion has already done so. The drinker of a potion is both the effective target and the caster of the effect (though the potion indicates the caster level, the drinker still controls the effect).

Remove Disease states that "You must make a caster level check (1d20 + caster level) against the DC of each disease affecting the target."

Ok, now, lets say I have a lvl 5 cleric who brews a potion of Remove disease, so now I have a potion that allows a caster level check of 1d20+5 to remove a disease, right?

But the Brew Potion feat states that the drinker is both the effective target and caster of the effect. Does this mean that a level 1 character only gets a 1d20+1 caster level check to defest the disease? Or does the potion remain 1d20+5 by virtue of the brewer?

On another note, if the brewer was lvl 7, then would the potion instead offer a 1d20+7 caster level check?

The caster level is set by the potion. Drinking a potion of Remove Disease brewed at CL 5 gives you a roll at d20+5 to remove the disease, regardless of your caster level, just like using a Wand of Remove Disease (CL 5) would.

The line "the drinker still controls the effect" is a bit odd, since you don't get to make choices such as for example what energy type your potion of Resist Energy protects you from. I think it's supposed to apply to potions of spells such as Levitate, where the motion is controlled by the caster, to indicate that the levitating creature is in control of its own motion after drinking the potion.

If a 7th level caster makes a potion of Remove Disease, they can choose to set the caster level of the potion at 7. This would give the potion's drinker a roll of d20+7 to remove the disease. However, since a potion's price is based on caster level this potion would be more expensive than the CL 5 potion. Specifically, the CL 7 potion costs 1050 gp (50*spell level * cl = 50*3*7) compared to 750 gp for the CL 5 potion, and it would cost 525gp to brew instead of 375gp.
