If you go with Barbarian you have many options with Rage Powers to do this. Animal Fury, Beast Totem Powers, Brawler Rage Powers, On top of those there are many others depending on your taste. There are also many unarmed feats that can help you especially with the Feral Combat Training feat which allows you to apply your unarmed strike feats to your natural attacks.
That's how I would do, mainly because I made a similar character this way.

I love this idea but feel the options are not very optimal if you want to stay on par with other party members, that is why I am working on my own alternate barbarian class the Skinwalker who instead of raging transforms into a lycanthrope style character. you become a humanoid beast with animal qualities.

Doesn't quite fit the feel or flavor I want. plus the loss on HP and Attack bugs me. and just as a personal thing, I don't like multiclassing most of the time.
The +2 Str pretty well offsets the BaB loss, and Darkvision is pretty nice.
I'm just trying to give a rules legal way for you to do what you want, for when you're in a situation where "I made a custom class" isn't an option.
