If a human sorcerer becomes a vampire at lvl 5 (type changes from humanoid(human) to undead (augmented humanoid human) )
Does he:
1) Loose all of his previous racial traits (+2to stat, bonus feat and +1 skillpoint/lvl)?
If not:
2) Then he keeps getting the +1 skill point/lvl from his human racial trait?
Additionally:
3) If he takes another level of sorcerer after he becomes a vamp (which changes his type) can he still gain his favored class bonus of +1 spell known for being human if he doesn't loose his human racial traits?

Vampire: "A vampire uses the base creature's stats and abilities except as noted here."
1) Loose all of his previous racial traits (+2to stat
"Ability Scores Str +6, Dex +4, Int +2, Wis +2, Cha +4. As an undead creature, a vampire has no Constitution score."
bonus feat
"Feats Vampires gain Alertness, Combat Reflexes, Dodge, Improved Initiative, Lightning Reflexes, and Toughness as bonus feats."
and +1 skillpoint/lvl)?
"Skills Vampires gain a +8 racial bonus on Bluff, Perception, Sense Motive, and Stealth checks."
2) Then he keeps getting the +1 skill point/lvl from his human racial trait?
He's no longer human, so he doesn't continue to benefit from the human "Skilled" Racial Trait.
3) If he takes another level of sorcerer after he becomes a vamp (which changes his type) can he still gain his favored class bonus of +1 spell known for being human if he doesn't loose his human racial traits?
Same answer.
All the stuff that's already happened has already happened. Your ability scores were what they were, and they're modified accordingly. Your skill ranks stay how they were. Moving on from that point, you're no longer human, so you don't gain further benefits from being human.
That's how it reads to me, anyway.

He's no longer human [...]
But he is, is he not?
"Vampire" is an acquired template, not a race. Any race can be a vampire. If racial traits would be lost, surely the text would state so, as it does in this case:Armor Class: Natural armor improves by +6.
Hit Dice: Change all racial Hit Dice to d8s. [...]
So, if existing stats are explicitly raised or replaced, surely they would be explicitly removed as well?
... Losing the racial trait would be justified, if Resurrection would bring a killed Human Vampire back as Human Vampire... if the result is a Human without vampirism, apparently he has never stopped being human.
Unfortunately, the spell description is not quite clear on that part either.
