I know Owls have a stealth skill but I assumed its because they hunt during the night and get concealment plus hiding in trees,ect.
But what about Wildshaped into an Air Elemental (small)? Can you use the Stealth Skill while hovering? Air Elementals do not use wings to FLY.
Can you use the Stealth Skill to hide 20 feet in the air during the day with no concealment or cover or anything substantial to offer a hiding place?
This came up tonight in our Game.

What everyone else said, basically. I'm just concurring.
You can stealth while flying, but you can't stealth without cover or concealment without HiPS or another ability that functions similarly. An owl can stealth while flying because it is a nocturnal hunter. Outside at night with a moon in the sky counts as dim light, and creatures can make stealth checks to conceal themselves. Since animals generally only get low-light vision, the owl can use stealth as it glides silently in to swoop up its prey.
The actual mechanical benefits of the elemental forms Wildshape grants are spelled out in the associated spell descriptions for the associated elemental body spell series. If they weren't, I'd suggest once the druid can become a medium elemental that s/he consider the Invisible Stalker, which has the air and elemental subtypes and has Natural Invisibility (Ex). By my reading of elemental body II, it seems like it's limited to just the basic elementals though.

I'm leaning toward that demonstration being categorized as Hips (Su). That's a supernatural ability right there. I think it's a mind-affecting fascination effect.
