I want my Pf Society character to have the skill required to write chronicles for the Society. Currently I have the skill penciled in as Craft [Chronicle].
My reason for taking it as a craft skill is that an NPC in the Serpent's Skull AP has Craft [Poetry] and I'm looking to create chronicles, not necessarily make a living off writing them.
A) Should chronicling be covered under a broader craft with a different name?
B) Should I instead be using a profession such as Profession [Scribe]?

Both would be just as valid. I think from a meta-standpoint, since you may use either of them for Day Job checks, I would go for whichever ability score you have higher. (Int for Craft, Wis for Profession.)
Of course, if you don't care one way or another, then just choose what makes sense to you.
I game flavor, all Pathfinders have enough schooling to Chronicle their adventures and discoveries. Unless you intend to use that to make money, I would not burn the skill points on it.
