Most magic items are required to be masterwork before being enchanted. UE has the Agile Alpenstock (a gnarled wooden walking stick) wich can explicitly be wielded in combat as a quarterstaff.
It would recieve a +1 to hit (but not to damage) because it must be masterwork, correct ?

The magic on the staff isn't combat magic, it's an enhancement to speed and CMD. I was just double-checking that when you use it in combat as a quarterstaff, you get the +1 to hit for it being masterwork, as if it was a masterwork quarterstaff with no magic on it.
The masterwork requirement is only for armor, shields, and weapons. Is it a magic weapon, or is it a wondrous item?

"A quarterstaff is a simple piece of wood, about 5 feet in length."
Given that it can be wielded as a quarterstaff, and that a quarter staff is a long stick. I see no reason it wouldn't work. You look good.
Unless this is PFS. You can make no changes to magic items in PFS so you can't do that there.
