I'm doin an old Ravenloft classic for next halloween... Touch of death!
Pretty much everything is set but one few thing.
What would be the appropriate CR for desert zombie?
Basically they are normal zombie in all respect but with 2 unique twist.
#1 Attack from beneath:
From what i understand the zombie come from under the sand and trie to start a grab against the victime without provocking AoO.
Each round the victime goes deeper into the sand.
After the 3 round (if the vicitme did not succed in breaking the hold yet) the victime is fully under the sand.
At the end of his 2nd round under the sand the victime die right there!
#2 Sandswim:
The zombie basicaly swim under the sand at 30' per sound and leave no trace unless very close to the surface.

Sounds like an interesting creature.
Also sounds like a very nasty 3.5 creature called "The drowned."
It didn't play by the normal suffocation rules which made it very dangerous. It was 20 HD and CR 8
You need to really define what you are giving the creature.
Sounds like:
Grab(Ex)
burrow speed
special suffocation ability
The first two aren't that spectacular. The last one is.
Personally, I would just give it grab and a burrow speed and use the normal rules for suffocation. That might be worth of a +1 CR bump over a base zombie.
First round grab victim. Second round drag victim using grapple rules and burrow speed to move into the sand. Victim must hold breath per normal rules.
