Another option, Half-Orcs have a racial feat (Beast Rider) that expands the list of mount choices, and one of the choices included is a flying mount.

Is there any reason why you can't use handle animal to train a flying mount?
They may not be animal companions or cohorts, but some creatures are pretty stout in their own right.
At level 10 I'd think the old fashioned Hippogryff would still be pretty viable.
Lots of animals get mentioned as being used or trained as mounts in monster entries. But I never see anyone talking about using handle animal to train one.
Is there any reason why the Paladin couldn't have a bonded weapon, and a mount he trained? Instead of using the class feature for his mount, and something he picked up along the way for his weapon?

There's absolutely no reason that a Paladin can't have both a bonded weapon and a mount. However if he has one, the mount isn't going to benefit from any of his class features, and will be just as it is from the bestiary unless you obtain a custom advanced beast.
Also note that Handle Animal won't work for mounts that are sentient. You have to establish a relationship with them as you would any cohort or ally.
