I'm trying to make a poison/acid/etc. -type guy as a BBEG, but I'm stumped on how exactly to go about it. Can anyone suggest any build ideas centered on this? The plant (decay) subdomain seems like an okay option (so cleric and druid are on the table), as does various bloodlines for the sorcerer, or a necromancy or conjuration specialized wizard, or something i'm completely failing to notice.
I was thinking something like a druid- or cleric/sorcerer, but seems like it'd gimp both classes, and mystic theurge seems to be a horrible idea for all involved parties.
On a different note, are there any ways for a class to change it's primary casting stat (mostly to make multiclassing slightly less painful)? I know of the empyreal bloodline for sorcerers, but are there any others like that floating around? or ways to grab things from other classes (like an advancing domain on an arcane caster, or bloodlines on a divine caster)

Personally I like sorcerer earth/deep earth/ draconic (black) for this theme.
Perhaps I'm mis-remembering. I thought deep earth had some acid powers.

For "disease and decay", witches get quite a few spells along those lines. They also have a Plague patron, although it really has more to do with undead than anything else.
As far as using unusual casting stats, Empyreal and Sage bloodlines for sorcerers are pretty much it. For grabbing things from other classes, the Eldritch Heritage line of feats is the easiest way to do it, letting you pick up sorcerer bloodline powers as any class (but not the bloodline arcana).

Have you considered the Blight Druid archetype?
looking that over, it gets me most of what I'm aiming for (if I grab the draconic (black) bloodline with eldritch heritage), and I'm pretty sure I can make up for the lack of acid spells with a staff or something. I think I'll take a look at witch too while I'm at it.

The metamagic feat Elemental spell (Acid) would net you any damaging spell you wanted as acid.
You also have a pretty rocking image of a blight druid with the new MTG set.

For some reason I think a Bane-like alchemist/barbarian with the aforementioned black dragon bloodline could be really cool. Give him a custom "acid-blooded" ability that splashes acid around him when hit by a slashing weapon and corrodes weapons like a rust monster.
Have the final showdown take place in an alchemy lab and give players a way to neutralize the acid. A smart player with craft alchemy may even be able to prepare a weapon with a way to inject a base into the guy that could act as a poison or cause serious harm or whatever.
Using the dragon claws you could have them deal an extra point of acid damage or something too.
Edit: you could also use throw anything to throw flasks of acid that grow into slimes minions as well!
