Tinderwig with a Hardness of...

A tinderwig, or basically a match, is small but made of wood.

Does/should this give it a hardness of 5?

"Wood" on the hardness/hp table generally refers to hardwood, such as oak or hickory, suitable for weapons, shields, doors, etc.

Wooden-stem matches are generally pinewood or other soft materials, and at fractions of an inch thick, it's wrong to just blindly assume a hardness of 5.

Since plate glass has a hardness of 1, a twindertwig might reasonably have a hardness of 0 or 1, and 1 hp.
