I have recently been awarded a +2 holy symbol of my deity. What spells or abilities would this benefit and how?
I would say this should be covered by the GM that gave it to you. It could be +2 to saves vs. Divine spells, it could be +2 to Caster level checks. +2 to Concentration. +2 to Effective Cleric level for Channeling Energy. There are a lot of things it COULD do, it's up to your GM to tell you what it DOES do (though he might require an Identify, or Legend Lore, or Knowledge (Religion) check or something similar in order for your character to know what it does).

Sounds like someone has been playing too much 4.0, imo.
No such thing as to much of a good thing, but yeah sounds like a 4E DM pulling something out of the air or running a 4E adventure and not changing the treasure, wich while I like 4E the two worst things are the treasure and the published adventures.
Anyway yeah I would maybe let it give you a +2 bonus to the DC's of any spells you cast and the DC when you channel energy, in a Pathfinder game.

That's an item based on a 4e rule.
Given the ability to target a character's weak saving throw, an item that gave bonuses to save DCs would be over the top. The DM might be better off giving you a string of prayer beads (I don't know if that item made it into Pathfinder, but it's in the SRD so probably yes), which gives buffs to certain divine spells.
