Windy Escape spell is a immediate action to cast, and as such can be cast at any time without provoking an AoO . My question is can you wait to until after a critical hit has been confirmed to cast the spell.
I would say no. and furthermore I'd say that you have to cast it when the attack is announced, and before "its a crit" or "its a hit" or whatever is announced.
Once the hit has been announced you are hit, and while you are free to cast the spell it wouldn't change the fact that you have already been hit.

An immediate action takes place before the inciting event. In this case, the attack is the event, not the damage. You must choose to use this spell when the attack is rolled. After the attack is rolled, you cannot use this spell to negate damage/crits/poison/whatever, but may use it for the next attack that is upcoming.
