So one of the players in my skull and shackles game is a drunken master/master of many forms. I want to make sure I handle everything correctly, so here goes:
1) At level three, can you only use the drunken ki pool to do the 5ft step, or can you use the powers that normal monks get at level 4 when they get their ki pool? I assume the former.
2) Can Crane Wing stop trips, grapples, and other maneuvers? I assume not, since it says the deflected attack deals no damage.
3) If you are in crane stance, for example, and get knocked prone, can you benefit from the stance? I assume not. When you stand back up, do you need to reenter the stance with a swift action? I assume so.

I would assume so too, nothing in drunken ki suggests that it instantly grants the abilities of the 4th level ki pool.
2) Can Crane Wing stop trips, grapples, and other maneuvers? I assume not, since it says the deflected attack deals no damage.
It also says *melee weapon attack* which is the main target for crane wing's description. I suppose if you considered the trip/grapple and other maneuvers as an attack made with a melee weapon, then crane style technically should stop it. In some ways, the damage thing is secondary.

Nothing in the style feat description (for any of the style feats) indicates that you cannot benefit from them when prone (except where being prone inherently prevents you from doing something, like charging, and even that isn't stated, just prohibited by other rules).

If you're making your trip attempt with a melee weapon, crane wing would work, however, grapple attempts are not weapon based maneuvers, and would not be affected, nor would any of the other non-weapon based maneuvers since it specifically specifies a melee weapon attack.
