I'm considering multiclassing to Buccaneer in our Skulls & Shackles game (hooray ARG!) So, I have a feat related question:

Amateur Gunslinger states that I get the grit and a single 1st level Gunslinger Deed, for now, we say I chose quick clear. Now, in a few levels I multiclass to Buccaneer, which the feat then changes to "Extra Grit", as I'm now a Gunslinger. Would I just lose the deed (quick clear?) The feat doesn't go into detail what it does for non-standard Gunslingers...

Yes, you would loose everything the feat gave you, including the deed.

What if you don't trade in your feat for extra grit? It's optional right? Would you then keep Quick Clear and the Extra 1 grit it grants?

It wouldn't make sense to keep it because at 1st level a Gunslinger gets ALL THREE first-level deeds (Deadeye, Gunslinger's Dodge, and Quick Clear). You don't have to choose deeds as a Gunslinger, you just get them at the given levels.

Some archetypes don't get Quick Clear (which is almost mandatory).

Fair enough, in that case yes I'd say it's worth not trading for Extra Grit, because you're gaining a deed and 1/2 of a feat for the price of a feet.
