Does using the whirlwind ability grant a creature any additional defenses/immunities, since the creature is simply made up of moving air?

I find it hard to believe that slashing a tornado with a sword would have any effect at all. Also, if the whirlwind can be hurt, then sucking up armed creatures would be suicidal in most cases. I refuse to believe that was the intent.

The Whirlwind ability doesn't also make the elemental (or caster) incorporeal- which seems to be what you're looking for with respect to defensive abilities. It already can move through and attack 40 squares (double move with a move of 100) without provoking an AoE. And drop anyone it picks up from a fatal height one round later.

What more are you looking for here? ;)
