If your trying to maximize bonuses try spreading them out and getting feats that allow you to add your state bonuses. Like int to dodge or dex to cbm and the such. Don't just focus on one stat or one thing. For ac remember that all dodge stack. id go with headbands and belts for all stats and then look into trying to fill in all the types of bonuses you can get. There is a list somewhere of the different types of bonuses.

they are unslotted, and even though the provide enchancement bonuses, because of the no slot, do they stack with other items? like a +2 dex Ioun stone and a +2 dex belt?
Some Ioun Stones stack with themselves, like a Crimson Sphere, which provides a +2 to Int and three of them will stack together for a bonus of +6 Int.

Please see Seekers of Secrets book, page 44, it clearly states that Crimson Sphere Ioun Stones stack (up to a maximum of +6 enhancement bonus to intelligence).

I'll check when I get home, at work now. I was assuming you were talking about the CORE ioun stone's, didn't cross reference the Chrimoson Sphere part just the +2 Int. :p
but I think I remember something along those lines.
Side note:
I don't think that book is PFS legal. I heard something about the Faction Guide I think. Maybe?

Seekers of Secrets not only is legal but was within the PFS core assumption when published, although it's now been moved out of the core in favour of the Pathfinder Society Field Guide. From PFS Additional Resources:

Everything in this book is legal for play with the following notes. Equipment: ioun stones use method 1 for resonance and never use method 2. Additionally, only normal ioun stones have resonance—inferior ioun stones never do.
Some things (mainly traits) from the Faction Guide are also PFS sanctioned.
