To use the specific example that instigated this question: Can my (2nd-level) summoner cast guidance on her eidolon when he's about 60 feet away from her and out of direct vision, since presumably summoners are so closely linked to their eidolons that they can cast spells on their eidolons through themselves - or am I getting this mixed up with other things or rules that didn't make it into 3.75? The DM and I are both stumped, based on what we read in the Advanced Player's Guide.

The summoner still has to touch the eidolon to give it guidance. This doesn't (if you were wondering) also affect the summoner.
The Share Spells ability does what it says in the text: it allows the summoner to cast spells of personal range and spells that affect humanoids (even though it's of the outsider type) on his eidolon. This is the same as the wizard familiar's Share Spells.
