Question about the Unfettered Eidolon

When building one for an encounter, am I limited only to the evolutions presented in the entry, or can I use any evolution that a standard summoner would have access to, regardless of where these evolutions got published in ?

I suspect the entry is just an example of what the unfettered eidolon could have. Presumably any eidolon that could be built by a summoner can become unfettered.
