It says if you fail by 5 or more, you go underwater.

But how far do you sink in one round?

The rules don't say you sink; they just say you go underwater.

As written, a person trying to swim will stay at the surface; each round, the person can try to make the swim check to stay above the water and breathe. Failure by 5 or more means you're underwater and have to hold your breath; success means you're not. Under neither set of circumstances do the rules indicate that you sink.

So, how far would an unconcious person sink in one round?

I did a little digging in the Environment chapter, but came up empty. I'm not sure where else you'd find such a rule, so it may be a "GM discretion area".

My personal suggestion would be to base it on armor/encumbrance:
Light armor/light load: 5-10ft per round (maybe 1d2x5ft?)
Medium armor/load: 15ft/rd?
Heavy: 20-25ft/rd?

Something like that, maybe.
